I thought I’d kick off Munchie Mondays with something really not healthy, because of all of those healthy Whole30 recipes. Here’s one of my very guilty pleasures. There is literally no good food in here. At all. You’ve been warned.
Salty Chocolate Peanut Butter Balls
-3 cups peanut butter
-1.5 cups white granulated sugar
-0.5 cups white flour (sometimes I use oats instead, depends on my mood)
-2 cups puffed rice cereal (I like to use chocolate Rice Krispies, but any kind will do!)
-0.5 cups Skor bits
-Semi-sweet chocolate, melted
1. Mix together peanut butter and white sugar.
2. Add flour (or oats), puffed rice, and Skor bits, and mix well.
3. Shape into balls and dip into melted chocolate. Feel free to do half dips, or full dips, whatever tickles your fancy. I like to use toothpicks and do a full dip, and then leave the toothpick in for ease of eating later. Put dipped balls on parchment lined baking sheet or plate, whatever will fit in your fridge.4. Sprinkle coarse salt over the balls.
5. Refrigerate until chocolate is solid… or really you could eat them right then but it’s messy. Enjoy!
